We infuse the peel of organic lemons slowly into our smooth golden rum — the classic Limoncello method, built on a rum base instead of neutral spirit. Bright, zesty and properly warming, with none of the artificial sharpness you get from flavourings.
No shortcuts. No artificial flavours. Just organic lemon peel, good rum, and time.
Organic citrus costs considerably more than standard fruit and it is harder to get hold of — but the peel carries far more oil, and that oil is where the flavour lives. It is the reason this tastes like lemons rather than lemonade, and the reason we won't make it any other way.

We use organic lemons and take the peel only — never the pith, which turns it bitter. It is slow, sticky work and it is the whole product.
The peel rests in our handcrafted rum until the oil bleeds out and the spirit turns gold. No heat, no shortcuts, no flavourings.

26% ABV. Lighter than our other rums on purpose — Limoncello-style drinks are made for long serves and after dinner, not for knocking you sideways.
Less than you'd expect. There is sweetness, but the organic peel keeps it fresh and zesty rather than syrupy.
Best within 6 months of opening. Keep it cool and dark — or in the freezer, which is how we drink it.
