We start with Seville orange zest and juice — the bittersweet orange behind proper marmalade — so the citrus tastes of real fruit.
Cassia, clove, cardamom and cinnamon join the orange, with a touch of demerara sugar to round the edges.
Then we leave it alone for 45 days, while the rum pulls the oil from the zest and the warmth from the spice.
Filtered, bottled and labelled by hand by our family at the distillery in Hailsham.
