Rum & Raisin Old Fashioned

The one that proves it does not need help.

  • 50ml Rum & Raisin
  • 1 bar spoon demerara syrup
  • 2 dashes Angostura bitters
  • 1 large ice cube
  • Strip of orange peel
Steps
  1. Stir the rum, syrup and bitters over ice for about thirty seconds — long enough to chill it and take the edge off the 49%. Strain over one big cube. Squeeze the orange peel over the top so the oils land on the surface, then drop it in. The raisin sits in the middle and the toffee arrives at the end.

The Pudding Pour

Two ingredients. The label's own serve, and still the best one.

  • 50ml Rum & Raisin, gently warmed
  • 2 scoops of good vanilla ice cream
  • Grated dark chocolate, optional
Steps
  1. Warm the rum in a small pan or a jug of hot water — warm, never hot, or you burn off the best of it. Pour it straight over the ice cream at the table, so everyone hears it hit. Grate a little dark chocolate over the top if you are showing off.

Bonfire Sour

For standing outside in November.

  • 50ml Rum & Raisin
  • 25ml fresh lemon juice
  • 15ml maple syrup
  • Egg white or 15ml aquafaba, optional
  • 2 dashes of bitters to finish
Steps
  1. Shake everything hard without ice first if you are using egg white, then again with ice until the tin is painfully cold. Strain into a chilled coupe and dash the bitters across the foam. The lemon cuts straight through the muscovado and leaves the oak behind.

How we make Rum & Raisin

Sun-dried vine fruit, steeped whole

Whole dried vine fruit goes in and stays in until it has given up its colour and its sugar. No raisin extract, no flavouring, no shortcut — which is why the colour is the colour it is.

Dark muscovado, not caster

Muscovado carries molasses that ordinary sugar does not, and that is where the toffee-and-oak finish comes from. It is the difference between a rum that tastes sweet and one that tastes like pudding.

Numbered, corked and sealed by hand

Bottled at 49% vol and numbered one at a time, No. 001 through No. 150, at our distillery in Hailsham. When the last number is written, the batch is finished for good.

Rum & Raisin FAQs

Is it as sweet as it sounds?

Less than you would expect. The muscovado is there and so is the baked-raisin note, but 49% carries real heat behind it, so it finishes warm and dry rather than syrupy. If you find most rum-and-raisin drinks cloying, this is the answer to that.

Why 49%?

Because dried fruit and dark sugar are heavy. At our usual 30% they flatten out and sit there. At 49% the spirit pushes back, the finish lengthens, and it holds its shape in an Old Fashioned instead of disappearing into it.

Why does it say contains sulphites?

Dried vine fruit is preserved with sulphites as standard, so they carry through into the infusion. We declare them on the label because we would rather over-tell you than under-tell you.

When will my bottle arrive?

This is a pre-order. Bottles dispatch from Monday 2nd November 2026, in good time for Christmas. Please note we do not ship part orders — if you order Rum & Raisin alongside other items, the whole order travels together once the release is ready.

Will you make more?

No. This is a Limited Release: one batch, 150 numbered bottles, and that is the end of it. Other flavours will follow in the series, but Rum & Raisin will not be repeated.

Any sediment?

Possibly, and that is the mark of a real infusion rather than a fault. Shake it gently if you like.
