Over 30kg of wildflower honey went into this batch, along with whole bird's eye chillies — steeped in our British rum base and left to sit until the two stop fighting each other. What comes out is thick, floral and golden, and then, a beat later, hot. At 49% vol there is nowhere for either flavour to hide.

Wildflower honey, not the cheap blended stuff — it carries a floral note that survives being put next to chilli. More than thirty kilos of it goes into a single batch, which you can taste before you have swallowed.
Whole bird's eye chillies go in and stay in. No extract, no capsicum flavouring, no shortcut. They are left until the heat stops being sharp and starts being slow — the difference between a burn and a warmth.
Bottled at 49% vol and numbered one at a time, No. 001 through No. 150, at our distillery in Hailsham. When the last number is written, the batch is finished for good.
Warm rather than punishing. The honey lands first and the chilli builds behind it, low in the throat, and then fades. If you enjoy a hot honey on pizza you will be entirely comfortable here.
Because honey is heavy and chilli is volatile — at our usual 30% one buries the other. At 49% both stay in frame. It also means it holds its own in a toddy or a sour without disappearing.
This is a pre-order. Bottles dispatch from Monday 2nd November 2026, in good time for Christmas. Please note we do not ship part orders — if you order Hot Honey alongside other items, the whole order travels together once the release is ready.
